What to do with all those eggs?

If you're looking at a pile of boiled eggs leftover from an Easter egg hunt, we have ideas to help you make use of them this week. They make a great grab-n-go breakfast meal. Put boiled eggs into lunchboxes, a great addition for kids and adults alike. I also like slicing them and making quick sandwiches with toast and ketchup.

Cooking with Trader Joe's

Easy Winter Soups

Cold winter months are the perfect time to warm up with comforting homemade soups. Homemade doesn't have to mean time-consuming, though! Here are some easy, nutritious soups you can prepare in minutes, using clever shortcuts from Trader Joe's. Soup's on!

 Taco Soup
All the things you love about tacos, in a big satisfying soup. This is a great one-pot meal for parties. Simply serve buffet style with all the fixings, and let everyone assemble their own bowl to their liking.

Black Bean Soup
Thick and hearty, spiced with smoky cumin and tangy with lime. It's a
healthy, low-fat, and delicious meal that can be part of a weekly menu.
 You can also let this
dish simmer longer and get very thick for a terrific bean dip or
burrito filling!

Miso Noodle Soup
Fresh shittake mushrooms turn up the
volume of the umami-rich flavor of miso soup. The layering of these
flavors is what really hits the spot. Add fresh vegetables, tofu, or dumplings for a complete Asian meal.

 Harvest Grains Soup
Trader Joe's Harvest Grains is a charming mixture of Israeli couscous, red quinoa, baby garbanzo beans, and orzo. They cook up quickly in this kid-friendly soup. For extra protein, add frozen shrimp or leftover chicken.

 Quinoa Mulligatawny
Hey Seinfeld fans, remember the Soup Nazi? This was Kramer's favorite soup. No wonder people were willing to wait in line for this
fantastic blend of vegetables, sweet apples, mild curry, and creamy
yogurt. Try our lightning-fast version using Trader Joe's tasty Masala Simmer Sauce.

Happy New Year!

If you want to eat better and slim down this year, check out
our newest cookbook, Skinny Dish! Use the
power of plant proteins and Jen's
easy-to-follow plan to shed pounds, feel bionic, and never resort to fat pants again.

What are readers saying?
I am in love with 'Skinny Dish'. I've been finding myself bored with
my usual go to recipes and short on time to make a healthy meal. This
book has inspired me! I've been eating better and my meat eating husband
has enjoyed the recipes we have tried so far! Thanks so much for the
inspiration to eat healthy!

Best cookbook ever. The author is smart and clever; the book includes
creative and adorable graphics, photos for every recipe, nutrition
information, and gluten-free indications; and the recipes are healthy,
delicious, and easy to make -- seriously.

My kids are pretty picky when it comes to veggies. The Shamrock shake
is a great way to get some super foods into them without them realizing
it and my kids LOVED it! We also tried the Zeus Mousse which was also a
huge hit. I love the bean salad and my husband can't wait to try the
chili. We have been very excited about this book and look forward to
trying more recipes.

Speculoos Cookies by shelbsyd
I fell in love with Trader Joe's Cookie Butter/ Speculoos Spread and I
just had to make cookies with it. These cookies have soft center and
crispy along the edges, with a wonderful Speculoos glaze over top!

Coq Au Riesling by Lance Mertz

A classic French dish! Chicken cooked with bacon, Riesling wine, mushrooms, onions and spices. It is creamy and delicious.

Agave Whole Wheat Machine Bread by Eva Patricia Gonzalez
I wanted to make my own whole wheat bread using agave as a sweetener
instead of honey, but I couldn't find one to use with my bread machine. I
wanted to use agave because of its low glycemic properties. The extra
wheat bran adds more protein and fiber to this bread.

Cooking with Trader Joe's

After Thanksgiving Soup

Wait! Don't throw out those turkey bones! Why not make turkey soup with the leftovers from last night's feast? It's a great way to use every last bit of the
bird (as well as leftover veggies and even stuffing), and you'll have enough to freeze several batches to enjoy
throughout the winter months. You won't believe how comforting and delicious this soup is, with all the flavors and aromas of Thanksgiving.
The main time-consuming part is boiling the turkey bones to create
rich stock. Boiling the bones for hours may seem daunting, but it's the
only way to get that true depth of flavor that you simply can't get out
of a box or can. It's worth it, we promise! And especially after all
the gorging on Thanksgiving day, it's nice to balance it out with a
light meal of turkey soup and fresh salad.
So while you're recovering from Thanksgiving food coma, put a pot of
turkey soup on the stove while you relax on the couch or get an early
start on holiday decorating. We hope you enjoy our After Thanksgiving Turkey Soup recipe.

Trader Joe's has been geared up for Halloween for weeks now. Pumpkins galore, pumpkin products galore
from Pumpkin Spice Coffee to Pumpkin Pancakes, new Halloween themed
Joe-Joe's, and cute pumpkin trees in the floral section. Of course, we
have some old-time seasonal favorite recipes for you right here, including
some really adorable ones that will take center stage on your dinner or
appetizer table. Join the fun below!
Mashed Boo-tatoes, Cobweb Guacamole, and Spooky Cupcakes!
Mashed Boo-Tatoes, a really cute side dish idea from
Martha Stewart. Trader Joe's sells frozen mashed potatoes, or you can
make your own. Simply pipe out ghosts using a piping bag if you're
fancy, or just make your own using a Ziploc bag with the corner snipped off. Use poppy seeds or black sesame seeds for eyes. Pumpkins make a nice side too!

Cobweb Guacamole is super easy using pre-made guacamole
and sour cream. Place sour cream in a Ziploc bag and snip off a small
corner for the webbing. Pipe out cobweb design. Since guacamole turns
brown, you don't really want to make this ahead of time. Serve with
your favorite quesadillas for a fun Halloween meal.

Halloweenie Mummies, Spooky Fingers, and Poofy Pumpkin Puffs are easy treats you can make with puff pastry, available seasonally at Trader
Joe's. Wrap around hot dogs for Halloween Mummies, cut with cookie cutters and spread Pumpkin Butter in the middle for Poofy Pumpkin Puffs, and use almond slivers or whole almonds to make Spooky Fingers.

Pumpkin Oatmeal combines one of the most nutritious vegetables (well, technically fruits) into a warm, comforting breakfast. There are so many reasons to eat pumpkin as much as possible. It is low
in fat and calories, and packed with antioxidants, fiber, and vitamins C
and E. It boosts immunity, reverses skin damage, and reduces the risk
of heart disease.

Halloween Cupcakes ideas, pictured from left to right:
1) Halloween confetti
 with chocolate covered sunflower seeds.
2) Ghost faces using chocolate chips in 2 different sizes for eyes and mouth.
3) Mummy faces. Use dollops of icing and then chocolate chips nestled on top for the eyes.
4) Pumpkin Gummies using Ghoulie Tummy Gummies, a gummy candy from Trader Joe's.

Wishing you all a spooky fun Halloween!
