Easy St. Paddy's Day recipes Sent Wednesday, March 10, 2010 View as html
Amidst excited hunts for four-leaf clovers, leprechauns, and pots
of gold at the end of the rainbow, you can cook for a crowd this
St. Patrick's Day and make it look easy with these hearty,
satisfying recipe ideas.

1. Shepherd's Pie is an Irish casserole with layers of ground beef or
turkey, mixed vegetables, and mashed potatoes.  You can assemble
this dish in advance and simply pop it in the oven at dinnertime. 

2. Beef Stew is another great make-ahead dish, and even easier if you
have a crockpot and can let it cook on its own.  To make an Irish
version of our beef stew, simply omit the wine and substitute 1
bottle of beer for 1 cup of beef broth in our recipe.

3. Irish Soda Bread is one of the easiest breads you can make.  Simply
mix everything in a bowl, form a loaf, and bake.  No kneading,
waiting for dough to rise, or bread machine necessary.  This
version uses sour cream to keep the bread extra moist.

4. An Irish Shandy is a refreshing drink combining Irish beer with
fizzy lemonade.  Simply mix equal parts beer and Trader Joe's
French Market Lemonade.  It's a great alternative for guests who
want a lighter, fruitier drink than Guinness.
