Warm summer days are upon us, and what better way to spend a relaxing summer day than with friends over a casual barbecue?  Below are fresh and easy summer recipes for your 4th of July weekend, along with grilling suggestions that are sure to impress.

Easy Summer Recipes
 
No matter what you're serving on the grill, these dishes are a great way to add to the festivities this weekend.
 
Strawberry Mango Salsa is a cheery announcement that summer is here!  Unlike traditional salsas with onion, this fruit salsa is intentionally left simple to let the fruit really shine.  Serve with cinnamon pita chips. 
 
Watermelon Cucumber Salad embodies summer in a bowl.  Crisp cucumbers, happy yellow tomatoes, and juicy watermelon are ultra refreshing on a warm day. The unique flavor combination is brought together with lime & herbs.
 
Lime Grilled Chicken is flavored with lime, saffron and onion.  The marinade really penetrates the chicken and tenderizes it, making it juicy and flavorful.  Grill whole breasts or make kabobs using wooden skewers.
 
Star Spangled Berry Cake steals the show with this colorful presentation of fresh berries.  Try the star pattern here or bake a 9 x 13-inch cake and create a flag pattern with red and blue berries.   
 
 
Or if you're just looking for something quick to pick up and contribute to a BBQ, consider picking up mini hamburger buns and mini hamburger patties (8 buns and 8 patties - why can't other brands match the number of buns to patties?), any of a long list of ready-made hummus containers, or even a fresh basil plant to give the host (just $2.99 for a large, fresh plant!).

Grilling Ideas
 

The 4th of July is the country's most popular grilling day, so it's likely that you'll either be throwing a barbecue or going to a friend's barbecue this weekend.  If you're looking for something beyond burgers and hot dogs, consider putting some of these on the grill:

Pizza - Trader Joe's has premade pizza dough for just over $1 a bag.  Let everyone assemble their own personal-size pizzas and toss them on the grill.  They cook up in just a couple of minutes, and you won't believe how good the dough tastes when it's grilled.
 
Vegetables - Use a grilling basket, or thread veggies on skewers.  Lightly toss the vegetables with olive oil, salt, and dried herbs.  A few minutes on a hot grill, and these veggies are good to go.

Shrimp - Marinate shrimp in olive oil, lemon, and garlic.  Cook for 2-3 minutes in a grilling basket or on skewers.  Sprinkle on heaps of fresh cilantro and serve.  This makes a terrific appetizer or main course.
 
Fruit - Grilled fruit makes a fabulous dessert for a barbecue.  The intense heat caramelizes the natural sugars in the fruit, intensifying their sweetness.  Try grilling pineapple slices, halved peaches, or even whole strawberries!  Serve on their own, or with vanilla ice cream.
