Good Fats, Bad Fats

Fair warning: the information in this newsletter is controversial and does not align with the official view of the medical establishment.  However many doctors are questioning the reality and truth of what is currently promoted as a healthy view of fats in the diet.  For more information on the controversy see "Lipid Hypothesis" on Wikipedia.

Last newsletter I wrote about the many different kinds of sweeteners available to us and which ones to avoid.  The worst was fructose as found in white sugar, corn syrup, and agave syrup.  The best were the herb stevia, and the sugar alcohol erythritol - hence the reason I chose them with which to make my sugar substitute.

This subject prompted me to explore the current research on what are good fats and bad fats.  There has been quite a bit of research in the last few years, and most of it is turning the accepted perception of fats on end.

One especially interesting study called the Lyon Diet Heart Study compared the American Heart Association Step One diet (a high carb and high vegetable oil diet) to a Mediterranean diet that was low in vegetable oil and higher in fish oil.  The result: a striking decrease in the number of deaths from heart attacks and cancer with the Mediterranean diet compared to the Heart association diet.

One of the biggest challenges in looking at fats is the amount of misinformation and outright lies that have been pushed on the public by past researchers and the folks funding their research.  The story begins shortly after WW2.  The US government decided that as a country we needed to become less dependent on imports from Southeast Asia - specifically our imports of coconut oil, palm oil, and Manila hemp rope.  Farm subsidies were created to encourage a domestic source of cooking oil - first as corn oil, then later soy and many others.  This put the developing vegetable oil business into competition with the existing coconut and palm oil trade.

In the early 50's a medical "researcher" named Ancel Keys promoted a hypothesis that saturated fats and cholesterol caused heart disease.  He didn't do any actual research but gathered statistics from around the world about diet and heart disease rates.  He then picked out the statistics from countries that seemed to support his theory and excluded the statistics that were contrary to his theory and published a book promoting the belief that saturated fats and cholesterol caused heart disease.  This book was jumped upon by the new seed oil industry in our country and a massive scare campaign was started to make people afraid of death by palm and coconut oils due to their high saturated fat content.

Studies were started to confirm the saturated fat hypothesis, but rather that use actual palm or coconut oil in the studies, they used artificially saturated fats made from vegetable oil.  These are what we know as trans-fats today.  Not surprisingly, these studies showed that trans-saturated fats were damaging to the body.  Marketers hid the fact that these kinds of saturated fats were not the same as natural saturated fats, and then convinced the medical world that the cause of heart disease had been found.  Everyone then jumped on board and felt very good about themselves for having been so clever as to discover the cause of heart disease.  Well here we are 50 years later - is heart disease gone?  What? - it is much worse than it was 50 years ago?  How could that be?  Oh yeah, the theory was based on lies and manipulated statistics and promoted to produce good business for agribusiness here in the USA.

To date there is no evidence that natural real saturated fats are bad for you - in fact quite the opposite.  Many studies have shown that saturated fat consumption (especially coconut oil) is in fact protective against the damaging effects of many diseases.  It seems to be particularly healthy for the liver - protecting it from alcoholic liver disease and fatty liver from excess sugar consumption.

Saturated fats are in fact the preferred fuel source for most of the tissues of the body except the brain and white blood cells.  When fats turn into energy, they do not release all the damaging free radicals that sugar releases.  Saturated fats have been the primary food calorie source for humans throughout history.  A big piece most people don't understand is that most of the food we eat is turned into saturated fats by the time it enters our blood stream - no matter what it was when we put it on our mouth.  The body can only healthfully utilize 22 calories of carbohydrate per hour.  The rest is turned into fat.  Fibers we eat are turned into fat in our gut by colon bacteria, and other carbs we eat beyond that 22 calories per hour are turned into fat in our liver.

So we live on saturated fats, no matter what we put into our mouths.  The real danger is trans-fats and polyunsaturated fats.  We pretty much get it now that trans-fats are bad, but the huge seed oil industry is still selling the lie that we need lots and lots of polyunsaturated oils.  We are told that these are essential oils because the body can not make them on its own.  The reality is that it is almost impossible to have a deficiency of these oils as we need so little of them.  Everything we eat that is a real food has the little bit that we need, so there is no need for the amounts industry is pouring down our throats.  In point of fact, it is the seed oil that is killing us.  Seed oils are mostly omega 6 oils that produce vast amounts of inflammation in the human body.  Corn, soy, sunflower, canola, safflower, cottonseed, and the rest are all poisonous to us.  Never eat any of these - ever.  All you can get from them is inflammation, pain, and tissue destruction.  All you need is 4% of your diet to be omega 6 oil for the necessary and proper uses of inflammation in the body, and all you need will be in the meats, vegetables, fruits, and other whole foods you consume.

Small amounts of omega 3 oils are also necessary for the health of the body, but just like the omega 6 oils, if the level goes too high they become damaging.  We need about the amount you would get by eating a pound of salmon or other cold water fish per week.  Fish oil capsules don't seem to work, but whole food sources do work.

Both omega 3 and 6 oils go rancid easily, and both will cause liver damage when combined with sugar or alcohol in the diet.

So where does that leave us?

Natural Saturated fats are good - coconut and palm kernel oil, cocoa butter, animal fats like clarified butter, beef fat, avocado, olive oil, and the fats found in the meats you cook.

Polyunsaturated omega 6 fats are bad - corn, soy, sunflower, canola, safflower, cottonseed, peanut, etc.

Polyunsaturated omega 3 fats are good in small amounts, 1-2 grams per day - fatty cold water fish, krill oil.  Stay away from sugar and alcohol.

Cholesterol - not actually a fat and it is the basic substance your body uses to make all your hormones.  The cholesterol in your blood stream is not related to the cholesterol you eat.  Your liver manufactures the cholesterol in your blood to make hormones with and to fight inflammation from free radicals.

Since you body can only process 400 to 600 calories of carbohydrate per day, don't eat more than that.  Your body will only turn it into fat and put it some place you probably don't want it.

Your body can only use around 300 to 450 calories of protein per day.  Any more than that can become toxic due to ammonia production in the breakdown of the protein.

That means the majority of your calories per day should be from nontoxic fats, meaning saturated fats.  This is the most efficient and therefore the most energy producing way to get your calories each day.  The trick is to make sure that your saturated fats are not poisoned with pesticides, antibiotics, and other toxic chemicals.  Seek out healthy and clean sources of meat and plant fats.  Usually pastured animals have all the fat you need in their muscle tissue.  Use the fatty cuts of meat instead of the lean cuts.  Be aware of your total calorie load so you don't consume too many calories per day.  This is easy to do once you start letting healthy fats into your diet.

Coconut Flour and Coconut Oil
We have the good stuff from Tropical Traditions back in the office again for you.  This is not your cheap solvent extracted coconut oil, but coconut oil harvested in the traditional manner - the oil is mechanically squeezed out of the coconut meat without the use of any chemical solvents.  These are pure organic coconuts raised without fertilizers or pesticides.  Its a little more expensive, but so much better for you.

Not getting enough exercise increases your risk of developing serious chronic disease.  It is estimated that lack of exercise is responsible for 5.3 million deaths each year.  Health authorities recommend a minimum of 150 minutes of moderate exercise each week.  Even more important is to get some brief bursts of really strenuous exercise to build muscular tone and cardiac endurance.
