The Responsibility to Be Healthy
My father uses a metaphor of a motor to describe how people engage within their communities. He and his wife are dynamic presences on many boards of directors for causes they care about. 
He is connected to his community and to his family in innumerable valuable ways.
There is no imperative to be connected, however. In fact, there is a trend towards isolation. Many Americans spend much more time communing with their screens than they do volunteering or connecting with people who are important to them.
My dad cautions us about becoming a motor that is running, but isn't connected to anything. Although prevailing cultural trends may condone and even encourage consumerism to become the purpose of one's life, that is corrosively destructive to our planet and actually injures the health of the consumer.
With food, that sense of responsibility can mean watching heavy hitting films to educate yourself, (like Food, Inc., May I Be Frank, or Forks Over Knives) rather than watching that romantic comedy you want to see. It can mean being the socially awkward parent who eschews the nitrite hotdogs and the chocolate milk and agitates for better choices at picnics and potlucks. It can mean doing the hard work of finding recipes for food you've never tried before (like mochi, kombucha, seaweeds, amaranth, chia seeds, cacao nibs) and finding a way to prepare them. It can mean being that one at Thanksgiving, who insists on the free range turkey.
Hard work? Fine. Where we often get stuck is feeling bad about disrupting the food status quo in our families and communities. But remember how the status quo is literally shortening the lives of American children? We have to get over that.
Plus food, as you know, is an extremely emotional issue. The road to taking deep responsibility for one's health can include multiple agitating confrontations with one's reliance on comfort food. Cravings, rationalization, self-destructiveness, denial, rebellion.... It's quite a ride!

Grilled Asparagus à la Sutherland
(adapted from www.stephencooks.com)

This is a great accompaniment to grilled fish or meat.  It can also be the center component of a salad.
Ingredients:
½ cup fresh chopped tomatoes
2 scallions minced
2 TBSP basil minced
olive oil
1 TBSP balsamic vinegar
1 tsp sesame oil
3 tsp tamari soy sauce
1 tsp hot sauce (optional)
basil leaves for garnish
toasted sesame seeds for garnish (optional)
Preparation:
1.    Rinse the asparagus and pat dry.  Snap the ends from the stalks, pour a little olive oil over them and roll around to coat.  Grill on medium hot flame until just tender.  The surface will just be starting to blister when done.  Sprinkle with salt just after removing from grill.
2.    Mix the tomato, hot sauce, scallions, minced basil, vinegar, sesame oil and soy sauce.  Spoon the relish mixture over the asparagus and garnish with the basil leaves and sesame seeds.

Beyond My Control. Really?
We are all in various stages of awakening to how much we create our own experiences in life.
There are lots of people who sincerely have no clue how they got to be overweight. There are those of us who blame our genetics for our experience of depression or arthritis or diabetes and so feel that our reliance on pharmaceuticals is an inevitable result of circumstances beyond our control.
But are they? Are these circumstances beyond our control? Beyond our responsibility?
When people feel done to they can experience more hopelessness, bitterness and fatalism than people who experience their tribulations as their curriculum-in-life. 
The shift from feeling like the screen onto which your life is being projected, to feeling like the projector is simply one that can make you happier. Even if it doesn't make your shitty circumstances disappear, it can have you see them as just circumstances, with both shitty and wonderful reverb in your life, which is probably somehow more true anyway.
And when you shift from being the screen to being the projector, all of a sudden, the food you eat matters a whole hell of a lot because it is what determines much of the content of this hologram you are throwing onto that screen.
Want to project frenetic chaos, stress and some mild paranoia? Eat a whoopie pie and some soda. Want to project lethargy, stuckness and pathos? Eat some deep-fried food.
Want to project vitality, growth and openness?

  Cannellini Bean and Spinach Salad with Mustard

by  Tina Annibell, CHHC
 
2 Tablespoons Dijon mustard
3 Tablespoons red wine vinegar
1/2 cup olive oil
6 shallots, finely chopped
2 fifteen-ounce cans cannellini beans
2 Tablespoons chopped thyme
3 large handfuls chopped spinach (@ 5 cups)
sea salt an freshly ground pepper
Combine the mustard and vinegar in a bowl and set aside.
Reserve 2 tablespoons of the olive oil and heat the remainder in a wide skillet.
Add the shallots and cook over low heat, stirringly occasionally for 5 minutes, until softened and translucent.
Stir in the cannellini beans and add the mustard-flavored vinegar and the reserved olive oil. 
Season with salt and pepper and add the thyme and spinach. Cook for a minute or two, just until the spinach has wilted, stirring continuously.
Serve, praise and enjoy!

There is someone very dear to me who is going through something really hard. 
 

I always think it's important to run a clean machine and try to become a conduit for the universal life force that creates your best self. 

 
But somehow it's even MORE important to eat clean when you are getting hammered by too much real life.
 

My own capacity to handle stress and pain is cut short by eating convenience foods, and I think that's true for most people. 

 

But I really do get it.

 
I really get the inclination to eat foods that are numbing when you're going through something you'd rather not feel. Boy, do I get that.
 
But right now the Earth is waking up. The bulbs are popping, the birds are chattering, the trees are budding, the insects are back.
 
Life force is exploding around us. When we are numb, we don't get to feel THAT. We cut out the good AND bad. 
 
How alive can you feel?
 
If you followed your body's desire to clean out and hyper-nourish and heal,  how vibrant would you get?
 
 How hard would you sleep? How clear can your eyes get, how glowing can your skin get? How much energy is your body capable of having?
 
Over time, our bodies naturally accumulate toxins. 
 
Cleansing and fasting are ancestral habits.  It's not a modern fad. But it's even MORE necessary to do it in the modern era.
 
Even the average American newborn has over 100 chemicals found in their umbilical cord blood! 
 
That's even before they've taken their first bite of food!
 
We ALL need to give our bodies a REST, to ease the digestive process and allow our detox pathways to clear and heal. We need to do this to stay in control of our health.

            It takes about 17 feet of sugar cane to
come up with 1 cup of sugar. I know this because I once called a sugar
factory and we worked out the numbers. If you visualize this
relationship - 17 feet to 1 cup - you realize that the refined cane
sugar has a lot missing that is present in the original: it has none of
the nutrients, vitamins, and minerals found in the plant, let alone any
of the protein and fiber. It is also missing the water, so consuming
sugar will make you actually thirsty.

  Asian Salmon Salad

by  Tina Annibell, CHHC
 
(see modified super quick recipe below)
2 - 3 servings
1 pound wild Salmon filet (skinned and de-boned)
2 scallions
1 small yellow, red or orange bell pepper
2 celery stalks (white ends and leaves removed)
juice of two lemons (I like extra lemon, you may want to start with one)
2-3 Tbsp Sesame Oil
3 Tbsp Drew's Soy Ginger dressing (add more if necessary)
 ¼ cup sesame seeds (toasting optional - use non stick pan med-low heat; shake seeds in pan until golden)


poach, grill or roast Salmon; cool in refrigerator
toast sesame seeds (optional); it happens very  quickly, shake pan over heat to prevent burning and remove from pan when golden brown and set aside to cool
finely chop all veggies
juice lemons into a small bowl and remove seeds
break apart Salmon with fingers and remove any bones if necessary
combine all ingredients and mix together

Modified Recipe for Super Quick Preparation
1 serving (double ingredients for 2 servings)
1 can Wild Alaskan Salmon
½ diced bell pepper (red, yellow or orange) or substitute chopped tomato
1 diced scallion or substitute chopped celery or onion
juice of 1 lemon
2 Tbsp Drew's Soy Ginger Dressing
1-2 TBSP sesame oil


Drain water from can of Salmon. (remove bones and skin if desired.)

Mix together all ingredients

Praise and Enjoy!

****Serve over a green salad and whole grain crackers like Mary's Gone Crackers flax crackers****

Eat to Evolve

...We are formed by our environment and our experiences.  We respond to the stimulus that comes at us.
It's natural to close down to protect yourself after an insult to your body or your spirit. We might not even notice the closure.
At some point, however, your body might highlight the stuckness that exists by communicating pain. Long term closure results in an energetic stuckness that may eventually result in some form of illness.
Sometimes we NEED that stuckness. We cultivate it. We genuinely can't handle the rawness and so we regulate the pace of our evolution by our lifestyle choices.
We might stay inside our comfort zone, solidify our routines till we are on "automatic pilot" and choose food that numbs us in order to achieve a feeling of safety. But...

 Chicken Burrito Bowl (serves 4)

African Peanut Soup
 
This recipe is deceiving.  As one client said, it makes no sense to me on paper, but for some reason it all comes together like a beautiful symphony in a bowl!  Give it a shot, you won't be disappointed.  And how about this novel idea - a mini portion, like a small cup, is a great snack - protein, fiber, healthy fat and veggies.  No kidding!  It may seem weird but don't knock it till you try it : )
3/4 cup organic dry roasted peanuts, coarsely chopped
2 tablespoons extra virgin coconut oil (sub olive oil)
1 medium onion, diced
3 cloves garlic, minced
2 Tablespoons fresh ginger, minced
cayenne, salt and pepper to taste
6 cups vegetable or chicken stock
2 sweet potatoes, peeled and thickly sliced
14.5 oz can diced tomatoes
2 15 oz cans red beans ie; adzuki or pinto, rinsed and drained
1 bunch kale, stems discarded and leaves chopped into bite-size pieces 
1/2 cup natural peanut butter (no hydrogenated oils or added sugar)


Heat oil in a large pot over medium heat.  Sauté the onion, garlic and ginger for about 5 minutes.  Add 1/2 cup of the peanuts, cayenne, salt and pepper and sauté for about 30 seconds.
Add the vegetable stock, sweet potatoes, tomatoes and red beans. 
Bring to a boil then reduce heat to a simmer.
Add kale and simmer for  20 minutes, or until potatoes are tender.
Add peanut butter and stir until combined.
Garnish each serving of the remaining peanuts.

Food and Integrity
When people begin to support their body's healing, their physical integrity starts to shine. This can be a slow process if you're starting from a place of profound imbalance, but it never DOESN'T happen.

I'm hatching a plan, men. I have a group of recipes and I'd like YOU to make one of them. If you're willing to make a simple dish and bring it along, join me and a group of other men who are interested in furthering their health for a discussion on how to get results. This will be 6:30-8pm at Camden Whole Health on a yet to be decided Monday or Tuesday night in February. Email me to get your choice of recipes.





 Chicken Burrito Bowl (serves 4)

½ teaspoon cumin
½ teaspoon paprika
3-4 Tbsp extra-virgin olive oil
1 medium red onion, thinly
sliced
3 cloves of garlic, minced
1 red bell pepper, thinly
sliced
1 15 oz can black beans, rinsed
and drained
2-3 cups shredded or cut up
cooked chicken 
1 jalapeno (optional - use a
spicy salsa for heat instead)
1 cup salsa 
1-2 cups finely shredded purple
cabbage (or other leafy green)
8-10 large romaine lettuce
leaves 
 
1.   In a large skillet on medium heat, warm cumin and
paprika in olive oil for about 1 minute. Add onions and cook for 5 minutes.  Add garlic and cook 1 minute.  Add peppers and cook for 2 minutes.
2.  Add black beans, chicken, jalapeno, salsa and
cabbage.  Cook until cabbage is
tender.  
3.  Fill
lettuce leaves with chicken filling and top with guacamole.

Guacamole
 
2 ripe avocados, pitted and scooped
out of shell
4 Tablespoons of salsa
½ -1 small jalapeno, finely diced
(optional)
Juice from half a lemon or lime, maybe
more
Sea salt and pepper to taste
Dash of hot sauce for more kick
(optional)
 
1.   Mash avocado with the back of a fork.
2.  Add remaining ingredients, mix well.
3.  Taste and adjust seasonings.
