Hello !
In
February, I had the pleasure of trying something I had never
previously experienced. It was my boyfriend's birthday so we decided
to celebrate it at a Japanese inspired Spa in Stockholm. I wont make
you jealous by going in to details, but as I sat in the outdoor hot
tub with snow floating down on to my face, I decided that it would be
in the interest of the whole country if the government paid for
everyone to experience such a relaxing 24 hours!
I
don't think that this is going to happen, but it is something that I
will do again I am sure. I am always very good at treating my body to
healthy, Life-Loving food, but I am not always so good at investing
time and money in little treats like a day at a spa, a massage, or a
good long yoga session. But I know exactly how these little
investments pay off in the long run, so I am going to make sure I am
nice to myself everyday, even if it's just doing something small and
quick like a 5 minute yoga stretching session, or giving myself a
foot massage.
Taking
time out and allowing our minds and bodies to relax is so important
for our overall health, and even for our productivity.
Talking
of which, I have been rather busy since the launch of my ebook. (By the way, I am
extremely flattered by the response I have received. Check out what
some people have been saying about it here... )

Spreading the word about Life-Loving Desserts

I have recently been working with a local conference center, helping
them introduce my Life-Loving Desserts onto their menu. I love all
this hands on work, and making desserts for people to enjoy! The
first dessert that I am helping them introduce is my Raw Chocolate
Torte with Raspberry Sauce. In fact, it was this dessert I made for
Christoffer's birthday. We ate it in our hotel room with Japanese tea
and a beautiful snow scape.

ways to raw up your breakfast
I believe that to successfully improve your health and your life, one needs to take small steps. This makes change less scary, and allows you to gradually get used to the new things you introduce into your life. The same goes with food, so below are a few tips to help you gradually bring more Life-Loving raw food to your breakfasts.
- Switch
to raw nut or seed milk on your cereals or porridge (oatmeal).
Non-dairy milks such as these are free from saturated fats, and
contain vitamins, minerals and healthy fats. Almonds are rich in
calcium and vitamin E, and Brazil nuts are high in selenium. These are
my favorites for a yummy nut milk. You can find a recipe for this great nut milk below.

Sprinkle
crushed flax seeds on your cereals or porridge (oatmeal). They are
high in omega-3s, B-vitamins and protein. Read more here:

Instead of spreading butter and cheese on your morning toast or sandwich,
spread on some avocado, add a little pinch of sea salt, and top with
slices of veggies like tomato, bell pepper and cucumber.

Whizz
up some healthful fruit and berries to make a yummy smoothie for
food on the go. Check out the recipe below for a great breakfast
shake! Adding green leaves such as spinach makes it even more

Instead
of your regular cereal, make a fresh and raw muesli from fresh
fruit, nuts, seeds and dried fruit. Although they are not properly
raw (as they are steamed) you can add some oats if you feel like you
want something more like a traditional cereal.

Not
hungry for breakfast? Prepare a smoothie to bring with you in a
thermos mug for when you do get peckish. Or, for a low maintenance
solution, bring some fresh fruit and some nuts to work/school so
that when you do get those mid-morning munchies you have something
good to keep you away from those vending machines and cookie jars....

For
a weekend breakfast treat, make a quick batch of my Chocolate OMG
Cakes, and serve with fresh fruit, one of my raw sauces, from my e-book and even a
raw 'Ice-cream' such as my
Chocolate Chip Ice Dream.
RECIPES
Breakfast
Smoothie
Serves
2
2
cups nut milk (see recipe below)
3
bananas
1
cup frozen berries e.g. strawberries, raspberries, blueberries
A
few drops of vanilla extract
Pop
everything in a blender, and blend until smooth.
Pour
into a glass, and top with breakfast favorites such as:
* Raisins
* Goji
berries
* Cacao
nibs or dairy-free chocolate chips
* Oats,
muesli, or your choice of healthy breakfast cereals
* 'Buckwheaties'
(soaked, sprouted and dehydrated buckwheat)
* A
drizzle of agave syrup or maple syrup
* Chopped
nuts or sliced almonds
You
can also serve this in a bowl and top with any of the above, much
like a fruit yoghurt.
Nut
milk
1
cup almonds
½
cup brazil nuts
3-5
cups of water, depending on how rich you like it
a
little pinch of sea salt
A
few drops of vanilla extract (optional, but yummy)
Blend
every thing together in a blender. To get a nice and smooth 'milk'
then strain through a sieve, nut milk bag, or a piece of muslin.
Keeps for up to four days in the fridge.
Tip:
you can re-use the pulp for another batch. Just pop back in to the
blender with more water (though not as much as the first batch),
whizz and strain!
If
you can, soak the nuts overnight in water, drain and rinse before
using, this is to increase their nutritional value and make them
easier to digest.
