Coaching
Since
completing a Diploma in Vegetarian and Vegan Nutrition in May,
I have launched my coaching services and am currently working
with a fabulous girl; we are both enjoying seeing her progress as she
kicks her sugar addiction and loses weight. I will be able to take on

Raw
in the UK
I am currently enjoying spending some time with family and friends in the UK. I particularly enjoyed
visiting some great raw food eateries in London including the classy Saf and the very yummy inSpiral
Lounge
in Camden. InSpiral serve a brilliant raw food breakfast as well as a 'baked
not fried' veggie/vegan breakfast. I had the pleasure of going there
with a beautiful friend of mine, and we did our very best to sample as
much of the raw menu as we could...just for research purposes of
course. I especially enjoyed the amazing raw pancakes stuffed with
banana and raw chocolate sauce with a scoop of raw double chocolate
ice cream. Needless to say, I do intend on paying this place another
visit before I return home!
Energy
Breakfast Talk
Talking
of breakfast (which happens to be my favorite meal of the day, by the
way - I eat at least 3 of them before lunch!), when I get back to
Stockholm I look forward to holding an Energy Breakfast Talk at a
leading Asset Manager. I am very excited about this as I know how
hard these finance folks work, so I am very happy to give them some
help with boosting their energy.

Recipe:
The busy girl's high-raw pizza
While
I do have a dehydrator and have made many a yummy thing in there, I
have to admit that recently I have not wanted to spend much time in
the kitchen, and so haven't used it much of late. This is especially
true now that I am spending a month in the UK staying with family and
friends.
This
week, my gorgeous sister made a delicious home-made, organic,
dairy-free pizza for herself and her husband (tip: instead of dairy
cheese try adding slices of avocado to your pizza after you take it
out of the oven, or drizzle it with a god olive oil and some sea
salt!). I was more than happy to try a little slice, but since I am
feeling so good from keeping to energizing raw food I whipped up a
delicious raw version instead.
This
recipe is great if you don't have a dehydrator or the time to make
your own base. I am really grateful that we can now find convenience
raw food on webshops and in well stocked health food stores!
Ingredients:
-
Raw
crackers (the are some yummy Italian style ones available here >>)
-
Dairy-free
red pesto (look in health food stores, or the 'free-from' section in
supermarkets) (Note: this wont be raw...if you want to be 100% raw
you can make your own)
-
a
selection of sliced veggies such as tomato, red onion, mushrooms (I
like to to marinate my 'shrooms first in a little tamari, lemon
juice and olive oil), courgettes (zucchini) and bell peppers
-
Slices
of avocado (optional but yummy)
-
A
few olives
-
A
splash of olive oil
-
Herb
salt and black pepper
-
A
few fresh basil leaves if you have some!
Simply
spread a little pesto on the raw crackers and top with the avocado
and veggies. Finish with a little drizzle of oil and some herb salt
and pepper, olives and basil (if using). Serve with a big green
salad.
Feel
free to add other yummy toppings such as sundried tomatoes and chili
pepper!
