I have always loved to eat steaks and enjoy cooking them too, over the years I have learned a lot about peoples eating habits and how so many people eat their steaks well done. This isn't negative, its personal taste and it almost always stems from childhood, Grandmothers cooking to Mothers cooking to the way you cook today it's an evolution of family favorites.
A couple of years ago, purely by mistake I slow roasted a beef joint overnight at very low temperature. The smells from the oven the following morning took me right back to my Grandmothers kitchen as a child. The intensity of smell from this slow roasted beef was enough in itself to make my mouth water. I unwrapped the roasting pan and uncovered this amazing delight only to find that it was so tender I couldn't do anything with it. After many attempts of trying to pick it up, cut and serve it, I gave in and decided to refrigerate it and try again the next day.
The following day I took this large cold set joint of meat from the fridge and started another process of trial and error. After many failed attempts I decided out of sheer madness to fry it. Now normally frying a piece of cold beef would end up being a disaster.......however on this occasion it was pure genius and in short, that's how Twice Cooked Beef began.
The sheer genius of this dish is it takes you on a childhood journey of tastes and aromas that have become a distant memory for most people. Once your fork glides through the crisp outer edge and exposes the soft tender meat you will, along with many others, become a fan of our Twice Cooked Beef.
We now sell more than double the amount of Twice Cooked Beef than any other dish on the menu. Our Beef is sourced from farmers who are just as passionate about food as we are, they use the most natural and traditional methods of farming to produce beef that is truly sensational!
