class. This is actually one of the most authentic of my standard classes. If you ever travel throughout Thailand you will always find Thai BBQ chicken for sale by the side of the road and usually other picnic items as well. The flavourful aroma of barbecuing chicken wafts just about everwhere in Thailand. Thai people love Thai BBQ Chicken for snacking and picnics — and it’s great accompanied by Sticky Rice and Papaya
Salad, the usual picnic favourites and usually on sale with the chicken. Of course, these dishes are on our Sunday menu, as are Crispy Rice Noodles with my Sweet & Sour Ground Pork & Shrimp filling. These are not quite so popular as the other items, but they are very very special — and especially together! Authentic Thai Papaya Salad made the old-fashioned way

This wonderful dish mixes well with just about every other kind of Thai food. It’s usually not eaten as a starter, as Westerners are accustomed to eating their salads. Instead, Papaya Salad is an accompaniment to a meal, eaten in combination with other dishes. The salad is crafted from a fantastic collection of ingredients including chillis, palm sugar, roasted peanuts,
garlic, tamarind, lemon juice, tomato and green beans. You can make it as hot — or not — as you like. And, like just about everybody in Thailand, you can customize your very own Papaya Salad with your own secret ingredients and spices! The highlight of this class will be the preparation of Papaya Salad the old-fashioned way, with a traditional Thai Mortar & Pestle. It’s the only way to bring out the flavours of all the ingredients but I admit that it can be a challenging
food workout!
Thai Style Barbecue Chicken

Chicken is marinated overnight in a special mixture of herbs and spices including lemon grass, garlic, turmeric and condensed milk — all of them crushed together by mortar and pestle. You’ll learn how to make this special marination sauce for the very best Thai BBQ Chicken.
Sticky Rice made the traditional way

It’s one of Thailand’s most popular dishes, especially in the North and Northeast regions of the country. When it’s cooked it’s sticky and can be formed into balls with fingers for easy eating. And that’s how Thais love to eat sticky rice, dipping the sticky balls into spicy sauces and then eating with papaya salad, barbecue chicken, spicy sweet and sour ground pork, and other tasty
dishes. Just like the ones you will be learning at this class!
Crispy Rice Noodles with Sweet & Sour Ground Pork and Shrimp

For westerners, this is an unusual way to experience rice, quite unlike any usual rice dish in North America. But these noodles are delicious and can be served as a replacement for rice, or as an accompaniment to other Thai dishes. They are also lots of fun to make, as the noodles expand in the hot oil and bubble up crazily over the rim of the wok! Hot & Spicy Shrimp and Pork filling This is an ideal party dish for guests who crave a little spicy snack late in the evening, a scrumptious savoury filling, simmered in Thai herbs and spices. It’s just fine surrounded by fresh seasonal vegetables, for dipping. And it is just great with the Crispy Rice, above. The Dish can be made in many variations
