Whether you are hosting a Super Bowl party or attending one, you need some good recipes under your belt.  Here are some of my favorites!

 

Todd's Texas Chili

Caramelized Onion Dip

Chocolate Peanut Butter Brownies

Todd's Texas Chili
Serves 10-12 hungry football fans

My husband's chili recipe is one of the BEST - it's requested after every party, and for good reason - it has the right combination of heat, meat, and sweet.  His secret ingredients: chipotle chilies in adobo and chocolate chips (yes, chocolate chips).  Serve this with all the fixins' - tortilla chips, cheese, sour cream - and you'll be legendary. 

 

4 Tablespoons vegetable oil
2 lbs ground beef
1 lb sausage, removed from casing
1 lb sirloin steak, cut into small cubes

3 onions, diced
5 garlic cloves, minced
2 chipotles in adobo with sauce, diced
2.5 cups beef broth
2 teaspoons oregano
4 teaspoons cumin

1 small can of tomato paste
2 (28 ounce) cans of crushed tomatoes
2 (14 ounce) cans of diced tomatoes
2 small cans of mild green chilies
6 Tablespoons chili powder

1/2 cup semisweet chocolate chips
1 Tablespoon brown sugar

In a large stock pot, brown the beef, sausage, and steak in small batches, using 1 Tablespoon of vegetable oil per batch.  Place browned meat in a colander to drain off the excess fat.  Set aside.

Heat remaining tablespoon of vegetable oil over medium high heat and sauté onion for 5 minutes.  Add garlic and chipotles in adobo, and sauté for 1 additional minute.  Add beef broth, oregano and cumin.  Simmer over low heat for 30 minutes (the mixture will reduce significantly). 

Add browned beef and all remaining ingredients to pot.  Simmer over low heat for 2 hours, stirring occasionally.    Enjoy!

 

Caramelized Onion Dip

The ULTIMATE onion dip!  Once you try this you won't go back to a boxed mix again! 

 

3 medium sized onions, diced

3 Tablespoons butter

1 teaspoon salt

1 (8oz) package of cream cheese, softened

1 cup sour cream

1 dash of Worcestershire sauce

4 shakes of hot sauce

Heat the butter in a medium fry pan over medium-low heat.  Add the onions and salt.  Cook for 30-40 minutes, stirring every 10 minutes. 

Combine the cream cheese, sour cream, Worcestershire sauce, and hot sauce in a bowl.  Stir in onions and refrigerate before serving.

 

Chocolate Peanut Butter Brownies

I don't know anyone who doesn't love the combination of chocolate and peanut butter.  This is a great recipe, using my favorite pre-packaged brownie mix (for convenience), topped with an irresistible homemade frosting.  Make double - they'll be coming back for more!

 

1 box Ghirardelli brownie mix (or your favorite brand), prepared according to package directions

1 stick of unsalted butter, softened to room temperature

1 cup creamy peanut butter

4 cups powdered sugar

1 teaspoon vanilla

1/3 cup cream

2 Butterfinger candy bars, crushed (Optional)

Prepare the brownies according to the package directions and cool completely.

In a large bowl, beat the butter, peanut butter, powdered sugar, vanilla and cream with an electric mixer until fluffy, approximately 2 minutes. 

Spread the frosting on top of the brownies.  Top with crushed candy bar and cut into small squares.
