Welcome to the Winacea E-newsletter. 
Two cents on Two-Buck Chuck, if you will.  Two-Buck Chuck aka Charles Shaw wine is the celebrity of cheap wines and the uber successful business brainchild of Fred Franzia, CEO of Bronco Wine Company.  In 2003 Fred Franzia launched this simple, California bulk-wine under the Charles Shaw label and sold it exclusively to Trader Joe's chain of specialty grocery stores.  The Bronco Wine Company now maintains more than 50 wine brands, but the Franzia label is not one of them!  The Franzia box wine that people quickly recognize is actually owned by The Wine Group, one of Bronco's three leading competitors.  The majority of the grapes come from the Central Valley region of California, although some of the grapes, grape juice, or wine come from prestigious areas such as Napa or Sonoma via tanker trucks. Surplus wine and surplus grapes from basically anywhere in California make their way to one of the four Bronco winemaking facilities and quickly transform into millions of bottles of cheap wine.  It's hard to believe you can buy a bottle of wine for less than a bottle of water.

Buttermilk-fried Chicken paired with dry French rosé

Serves 4

INGREDIENTS:  
  4 c buttermilk
  ¼ c table salt (noniodized)
  1 T red hot-pepper sauce
  4 lb chicken pieces (breasts, thighs, and drumsticks)
  1 c all-purpose flour
 
¾ tsp baking powder
  ½ tsp freshly ground black pepper
  ¼ tsp cayenne pepper
  ½ tsp dried marjoram
   1/2 tsp dried thyme
   1/2 tsp dried sage
  canola oil for frying

In an extra large bowl (glass, ceramic, stainless steal), pour buttermilk, salt and hot-pepper sauce and whisk until salt dissolves.  Add the chicken to the bowl, submerging it completely in the liquid.  Cover the bowl and refrigerate for 6-12 hours.  Remove from refrigerator one hour before time to cook and leave on countertop.  In a shallow dish, combine flour, baking powder, black pepper, cayenne pepper, and dried herbs.  Shake off the excess liquid from each piece of chicken before placing in the seasoned flour.  Coat each piece of chicken and transfer to baking sheet.  In a deep, large frying pan, fill with oil 1 inch in depth.  Preheat oven to 350 degrees.  Heat oil in fry pan over high until a thermometer reads 350 degrees.  Using tongs, add the thighs and drumsticks to the hot oil.  Adjust the heat as needed throughout the cooking process to maintain the 350 degree temperature.  Fry the chicken about 4 minutes on each side until golden brown.  Transfer the pieces to a rimmed baking sheet and set in oven for 10 minutes.  Fry the remaining breasts in the same fashion.  Add the breasts to the baking sheet with the other pieces and bake for another 10 minutes.  Remove chicken from oven and serve with your favorite side dish(es).  Serve with a chilled bottle of French rosé.
