Jeanette's Message
Hi all. Hope your summer has been enjoyable. I've gone on a few hikes lately and WOW has it been beautiful here in Northern CA! Spending time outdoors is at the top of my list for self-care and health maintenance. It's so important to make time for ourselves and take a break from all types of work for awhile. Our bodies and minds 
really need to be de-stressed on a regular basis for better health and wellness. 

And there's no better time to take a break than over Labor Day weekend! Pay tribute to yourself and other hard working Americans by doing something rejuvenating and uplifting this weekend for yourself and with your loved ones. I'm off to Tahoe with family! Let's look for ways to experience how wonderful life is. Happy Labor Day everyone!

Our bodies do their best healing when we are deeply calm and relaxed. The Scoop on Quinoa (High Protein Superfood!)
Although Quinoa (pronounced keen-wa) is cooked and eaten like a grain, it's technically a seed and is related to spinach, chard and beets. Quinoa is a complete protein, which means that it contains all the essential amino acids necessary for our nutritional needs. It's also high in iron and calcium, and is a good source of manganese, magnesium, copper, vitamin E and fiber. I especially love it because it's gluten-free, perfect for those with gluten sensitivities. It has a mild, nutty flavor and tastes great hot or cold! Are you ready for a yummy meal? Here's one of my family's favorites:

Delicious Quinoa Tabbouleh
1 C uncooked quinoa
½ C chopped cilantro (loose, not packed)
½ C chopped parsley (loose, not packed)
4 green onions, chopped
2 tomatoes, chopped
½ C sliced cucumber or celery
3 Tbsp. fresh lemon juice
3 Tbsp. extra virgin olive oil
2 Tbsp. real maple syrup
½ tsp. Crystal Himalayan Salt or sea salt
½ C slivered or chopped almonds

Bring 2 cups of water to a boil, add the quinoa, put the lid on the pan, and reduce the heat to low. Simmer for only 10-15 minutes, until the water has been absorbed. (It'll turn translucent and have a little "tail.")
 
Mix the lemon juice, olive oil, maple syrup, and salt in a medium-sized bowl that has a lid. Add the quinoa and vegetables and toss well. Refrigerate for 1 hour or more. Then add the almonds and serve.

My latest additions to the Youthful Hearts home workout collection are Chair Aerobics #2 and Still Going Strong, #4. Chair Aerobics is ideal for those with limited mobility who have trouble standing. Newcomers are often surprised by how much effective exercise we can do while sitting in a chair! Great for improving vitality, circulation, joint mobility and feeling all over better in your mind and body.
