Chef Chloe's Carrot Cake
Ingredients:

  • 2 1/2 cups shredded carrots(save 1/2 cup of carrots for frosting)
  • 3 eggs​​​​​​​
  • 1/2 cup applesauce (unsweetened) or
  • 1/3 cup of peanut butter
  • 1 tsp cinnamon
  • 1 cup rolled oats
  • 1 cup of homemade beef or chicken broth
  • 2 1/2 cups brown rice flour

Instructions
  1. Preheat oven to 350° 
  2. Lightly spray muffin tin...
  3. In a large bowl or mixer, stir together the carrots, eggs and applesauce or peanut butter...
  4. In another bowl mix together the cinnamon, oats and flour...
  5. Then mix in the dry and wet ingredients.
  6. Stir in a cup of homemade broth 
    ​​​​​​​until well blended...
  7. Scoop mixture into muffin tin...
  8. Bake for 25 to 30 minutes...
  9. Cool completely on a wire rack then place in the fridge for 1/2 hour
  10. before frosting
    and serving...
Frosting:
  • 8 oz. low fat cream cheese, softened
  • 1/4 cup applesauce, unsweetened
  • 1/2 cup of shredded carrots (Topping)
  • 1 tbsp of peanut butter
