- 2 1/2 cups shredded carrots(save 1/2 cup of carrots for frosting)
- 3 eggs
- 1/2 cup applesauce (unsweetened) or
- 1/3 cup of peanut butter
- 1 tsp cinnamon
- 1 cup rolled oats
- 1 cup of homemade beef or chicken broth
- 2 1/2 cups brown rice flour

- Preheat oven to 350°

- In a large bowl or mixer, stir together the carrots, eggs and applesauce or peanut butter...
- In another bowl mix together the cinnamon, oats and flour...
- Then mix in the dry and wet ingredients.
- Stir in a cup of homemade broth
until well blended... - Scoop mixture into muffin
tin...
- Bake for 25 to 30 minutes...
- Cool completely on a wire rack then place in the fridge for 1/2 hour
- before frosting
