How was your summer?
Mine was filled
with travel, delicious food, business opportunities, developing new friendships while deepening the familiar, and of course, personal growth!
The most significant tool that supported me to truly Live Vegan Vibrantly this summer was of course, FOOD!
Therefore, I’d like to share with you, one of my most
favorite and delicious recipes that I enjoyed throughout the summer.
Vibrant Bliss Bowl
Ingredients: 2 cups rainbow Quinoa, cooked 1 cup Chickpeas, cooked 1 large white Onion, large dice 2 large Carrots, 1/2 inch pieces 1/2 cup Seitan, rough chop 6 large Collard Leaves, chiffonade 1 tsp Sesame Oil, optional 2 tsp Shoyu, optional 1 handful roasted Pumpkin Seeds
Instructions: Combine the cooked quinoa and chickpeas. In a large skillet, sautée the onion and carrot with the sesame oil and 1/2 of the shoyu for 10-15 minutes. Add the seitan and collard greens. Add the rest of the shoyu. Cover and cook for 5 minutes. Continue to sautée until greens are at your desired tenderness, about 8-10 more
minutes. Serve the quinoa and chickpeas at the bottom of your bowl, top with sautéed vegetables and sprinkle the pumpkin seeds on top. Tell me about your summer, and how you liked this recipe. Looking forward to sharing with you!
