+ Stay Summer Smart | Education
The combination of summer heat and Christmas food can make as lethargic at this time of the year. Finishing off another busy year, we've certainly earned the right to relax. However it is important for everyone to maintain some level of activity throughout the Christmas holidays to keep our mind and bodies healthy. While we don't want to interrupt family time by hitting the treadmill, there are other fun, family activities we can take up instead.

A family day at the beach welcomes lots of different avenues for exercise. Swimming is great for the heart and gets the blood pumping, while still managing to stay cool. Even just walking in water or paddling with a kickboard is a great way to keep your fitness in check. A game of beach cricket or volleyball is another great way to get multiple people involved, have a good laugh, and get your body moving.

While beach activities are a great source of exercise, it is important you stay sun safe as well, particularly for those with diabetes. Hot weather leaves people on insulin at higher risk of hypos, so be sure to monitor your blood glucose levels regularly. It is also important to keep your insulin cool, so if you are travelling over the summer break, keep your insulin in an esky with ice bricks. For everyone, it is important to slip, slop, slap, and to stay hydrated with plenty of water. Keep you and your family safe this summer.
 
 
 
+ Diabetes-Friendly Fruit Cake | Nutrition
Christmas is a time for family, fun, and of course, food. Managing your diabetes throughout these time of year can be a little tricky, but it doesn't mean you need to miss out on Christmas treats. Adapting classic recipes so they are lessened in sugar and carbs is a simple way to keep your glucose levels in check while still enjoying delicious food.

An all-time favourite at Christmas time is fruit cake. Perfect as a Christmas night dessert or a handmade gift, fruit cake is a general crowd-pleaser, and quite easy to make. This recipe below requires only a handful of ingredients, a simple method, and is low in carbs and refined sugar.

Ingredients:
  • 200g mixed fruit
  • 2 cups dates chopped
  • 440g canned fruit salad
  • 1 cup apple juice
  • 1/4 tsp bicarbonate of soda
  • 2 cups self-raising flour
Method:
  1. Boil together fruit and juice for 10 minutes, then cool.
  2. Add flour and bicarbonate of soda.
  3. Bake in a greased and lined tin at 180C for approximately 1 hour or until cooked.
To store, wrap the cake tightly in cling wrap, place it in an air-tight container, and keep it in a cool, dry place or in the freezer. If giving the fruit cake as a gift, simply wrap in clear or coloured cellophane and tie at the top with curling ribbon. Bon appetit!
