The last Jersey calf of 2021 finally arrived seven days after her due date, on December 1st. And yes, I said HER—it was another heifer calf! She is from my Princess cow family, so I named her Princess Theodora, after the Princesses Theodora of Greece and Denmark.
The night before Theodora was born, I jokingly asked my husband if we should bet on whether Gabriella's calf would be a heifer or a bull, and we both agreed there was no way it could be another heifer. Well, I guess we were wrong! 😂
I taught two 'Introduction to Cheesemaking' classes on Saturday, December 4th. Unfortunately, our internet was down that morning, so two hours before the first class, I packed up my laptop and all my cheesemaking supplies and hauled everything to my parents' place (they live about 25 minutes away) and taught the classes there! I am so thankful that they graciously allowed me to take over their kitchen for the day and helped me to get everything set up in time
for the first class.
