This rich, dark vegan fruit cake is jam-packed with dried fruit and booze (although still delicious made alcohol-free). It's so flavourful and there is no overnight soaking of fruit involved!
Make it now and feed it a couple of times before Christmas. Like a fine wine it gets better and better as it matures. Believe it or not it will keep for up to 4 months or 1 year if you freeze it.
Keep the decorations simple and rustic, or cover it in marzipan and fondant icing. Perfect for enjoying at Christmas but also makes a fantastic vegan wedding cake.
