This is a cake meets dessert type situation. The sponge is light, delicate and almost syrupy in texture. Almost like you've drenched it in syrup, only you don't need to. This means it's great to enjoy by the
slice like cake, but also great for dressing up as dessert with berries, poached fruit, dairy-free whipped cream or custard (recipe coming soon!).
It keeps really well too, so is great for making ahead when entertaining. It's so moist that you don't need to worry about it drying out.
