Healthy Banana Cookies
These cookies are a simple bake for summertime enjoyment.
As you know I love preaching - teaching protein and fiber.
Here is the recipe and also here are my tips for making these even more nutritious and delicious!
Our coaching group is being challenged this week to make this recipe and then to see what additions they can add to increase the protein or fiber or both.
I challenge you to do the same. Although you won't get to enter our drawing for a FREE prize like our group participants will you can still enjoy the fun!
Recipe
3 ripe bananas - never frozen
1 cup raisins
2 cups old fashioned oats
1/3 cup organic olive or avocado oil
1 teaspoon vanilla
Preheat oven to 350'.
In large bowl, mash the bananas, stir in oats, raisins, oil an vanilla.
Mix well and allow to sit for 15 minutes. This allows the oats to absorb the moisture from the bananas and oil.
Drop by teaspoons onto greased cookie sheet.
Bake for 15-20 minutes.
Makes 2 dozen.
Now the fun part. I always love experiments especially in the kitchen. I did experience several mishaps in lab class in high school and college. The pig mishap in lab was my partners fault. Who knew formaldehyde was that strong and can make a person faint while holding a fetal pig!
Ways to increase protein and fiber and flavor!
Protein
- Add in 2 tablespoons favorite nut butter
- Add in 2 tablespoons favorite chick pea protein
- Add in 3 tablespoons chopped nuts - I love pecans
Fiber
- Change oil for applesauce - organic or homemade
- Add seed fiber from Amare
- Add freshly ground flax seeds
- Add 1/2 teaspoon chia seeds
Flavor
- Swap cranberries for raisins
- Add cinnamon - 1 teaspoon
- Add 1/2 cup pumpkin puree in place of applesauce
- Add chocolate chips
- Add 1 tablespoon cocoa powder
Just writing this makes me want to bake a batch right now! YUM!
