Now I
am in the third week in Nebraska, on the South Dakota border. We are on a Horse and Bible Camp Mission trip. It is my granddaughter - Sunshine and myself.
This time I have no blender since I had to fly into St. Louis, picked her up, and drove a rental car to the mission.
As you know, camps and mission trips are about feeding a large group of people and not about the quality of food. Yet, the flavor is good.
So for breakfast there are eggs to be enjoyed. Not organic, not free range. But I am not going to let that interfere with the mission.
Lunches - Since the camp team is feeding the Pine Ridge Native children, the meals are simple. Day one hot dogs, chips and Oreos. Day two white bread ham sandwiches. Day three Pizza Hit pizza.
This required prayer. Our first night was a team meeting and a local favorite: Indian tacos. This includes Fry Bread for the shell and then the
normal toppings.
I enjoyed the toppings and skipped the fry bread.
Yet, when the lunch of hot dogs came, I prayed for an alternative. And God provided. I made a delicious lunch salad with the left over toppings from the taco salad. I was also shown where the lettuce was
stored.
Now I knew I could make this week work.
The second dinner was roast beef, roasted potatoes, and carrots. I enjoyed a nice dinner of roasted carrots and some potatoes. I am not opposed to beef, but
realized I would do better with carrots instead.
So, the point is this. When I remembered to seek the
Lord for the simple task of finding healthy food, He provided. The lettuce was regular head lettuce. When presented with options such as iceberg lettuce instead of kale, God will still bring the nutritive effect. Iceberg lettuce has some fiber and is very hydrating.
God cares about the little details. Letting food become an interference to what God is about to do can be a downfall.
In every situation - God cares and will answer prayers.

I pray as this summer is now upon us, and travels are a fun time to rest and see the world. I pray you take God with you in all the details.
It is not an excuse to eat foods that can lead to mental fog, diabetic swings, or inflammation. We can stay strong, eat well, and exercise daily.
Then, as we were reminded this morning during our camp leader devotions, prayer changes the heart and, I add, prayer changes the mind. Prayer fills the plate with the food He calls good!
Remember - what you have learned to this point has been practiced for the times of vacation and
travel.
So instead of leaving your best skills at home, enjoy traveling with
them.
- Make a plan.
- Know what you can take with you: protein bars, protein powder, etc.
My granddaughter made protein snacks from a mixture of peanut butter, oats, chia seeds, and honey. They were perfect for us when meal-time came and we were not hungry yet.
- Pray for God to show you options.
Be strong and courageous. The
Lord is with you, even in the kitchen and the restaurant.
