Cheesy Chicken Chili is easily made in one skillet on the
stovetop. No need for special tools like a slow cooker or Instant Pot. Just you and your stove.
It's especially great for using up your soup vegetables. You will use celery, carrots, onions and your choice of green chiles. I
like to use poblano chiles but, if you add a little jalapeno or serrano, you can add more of your favorite spicy heat.
As a matter of fact, I think I'll need to make some of this soup today. I have some vegetables in the
refrigerator that need using and soup is the best way to make sure you don't waste them.
