Yes, please! This Watermelon Olive Mint Salad is refreshing. What a terrific salad to celebrate National Watermelon Day!
I have been known to make this salad and eat the whole recipe myself. It is filling, yet low in calories. Check out the nutrition here.
What Feta Should I Use?
The recipe calls for feta cheese, which I love for its saltiness and protein. Do you know that most feta cheese sold in the U.S. is made from cow's milk, not the traditional goat's milk? If you need to avoid cow's milk, but you can eat goat's milk, be sure to read all the labels. Make sure it says "Goat Cheese" and get a good one (affiliate link).

Hello ,
August 3rd is "National Watermelon Day." I love to celebrate these special food days by creating a recipe that uses the product. Watermelon is not one of my top favorite fruits, but when I match it with the saltiness of feta cheese and olives, OMG. It's amazing.
My second recipe for you is also a watermelon salad—and it's super good, too—but it doesn't include olives. This one has tomatoes, cucumbers, watermelon, toasted almonds and feta. The dressing for it is a combination of fresh mint, dill, and basil, along with red wine vinegar. I love it. I hope you do, too.

Watermelon Salad Refreshes
I'm not one to crave a slice of watermelon. When I take a bite, I think, "Hmmm. It's okay." But put it in a salad with some crunchy veggies and salty ingredients, and I'm all in.
This Watermelon Cucumber Mint Salad has a hint of mint, but the vinaigrette dressing has much more depth. The watermelon makes the salad sweet and moist, tomatoes give it a bit of tang, and cucumbers provide the crunch. It's a truly delightful salad.
