Today is National Waffle Day and March 25 is International Waffle Day. I think my Light Fluffy Gluten Free Waffle recipe is the best one!
And they freeze well, so you can make extras, wrap them in wax paper and put them in a freezer bag to pull out anytime and toast. Really, you're gonna wanna kiss me for this tip.

On The Personal Side
Don and I are starting a cooking class for our local teenage grandchildren. We start this week. The first meal is one we have already taught two of the three of them, Marinated Flank Steak and Roasted "Fried" Potatoes. We'll have some corn on the cob and a peach tart, too.
The hardest part will be coming up with menus that all three like to eat. One doesn't eat potatoes or rice (except French fries), only likes beef steak, fried chicken or "chicken fried" pork chops, loves raw tomatoes, and only eats corn and maybe raw cucumbers. Another is allergic to raw tomatoes, eats most things you give her saying "it's delicious" (which generally means she doesn't like it), but prefers not to express an opinion. The last one eats everything, but
definitely prefers a meat-heavy meal. Wish us luck!

Easy Chicken Marsala
Don't You Love Chicken Marsala?
I sure do! And it's super easy to make. You know me, I'm a 30-minute cook. My husband will attest to the fact that I make a huge mess when I cook, though.
The step-by-step recipe will guide you through the process. Basically, you sauté the "floured" chicken, set it aside, and then cook the vegetables. Make the sauce from the drippings, and put everything together. Oh my! So good.
I serve this meal with pasta, but y'all know I can't eat gluten. My favorite gluten-free pasta is Bionaturae Organic Penne
