How About An Easy Meal?
There are only 6 simple ingredients in this quick meal: pasta, pesto, shrimp, olive oil, red bell pepper, and pecorino romano or parmesan cheese. It took about 20 minutes to make and was very tasty.
I used gluten free spaghetti noodles (affiliate link) and tail-on medium-sized frozen shrimp. I also used our own homemade Pesto Besto, but you can use jarred pesto (affiliate link) if you prefer.
Add a side salad and a glass of red wine, and you have a relaxing meal.

Last weekend Don and I went to our first-since-the-pandemic-began pottery show in Stanardsville, Virginia. Oh, the beauty!
We bought pottery from two potters, Kary Haun and Elizabeth Krome. You can see Elizabeth's bowl in the recipe above. How I wish I was rich and had a huge house. There were platters, vases, bird baths,
and lots more. It was amazing.

Poached Eggs are easy to make and are better for you than fried eggs. This easy recipe tells you how to do it two ways.
These eggs were a Saturday favorite when I was growing up. I learned to make them by the time I was 8 years old. We used a cast iron skillet to make them back then (don’t do that). I later learned to make them in a medium saucepan with more water. My husband Don taught me to add a little white vinegar to the water to prevent the bits of eggs sticking to the pan for an easier
clean-up.
But now we have a better way to make them using just one simple hack.
