If you remember from last week, Don and I are in Spanish immersion school. We have another week to go.
We had a bit of a scramble at the last minute when our flights were changed. Don, my miracle worker, got us back on our original flights, but a day earlier. That was a stretch for this last-minute girl. But we made it. Hoorah!

I like to read Lovina Eicher's newspaper column when I get a chance. She's known as "the Amish Cook,"
and has several cookbooks available.
Recently, she published her "Monster Cookies" recipe. I made the cookies for the grandkids. They were
a bit too sweet for me, but the grands LOVED them. When I made them again to share with you, I reduced the amount of sugar and changed the peanut butter to crunchy. Holy cow, are they good! And gluten free, of course! In fact, there's no flour in the recipe. And they aren't that bad for you...only 135 calories per cookie, 13.8 grams carbs, and 2.8 grams of protein.
