Hola! Mi clase de español tiene que perfecto! (I'm not sure if that sentence is properly constructed.) The class is over and now we are enjoying the Arenal area of Costa Rica.
We can see the volcano in the distance and are staying in a lovely home with a view of the large lake. The birds start chirping around 4:30 am. There is one that sounds like a bubble, but I don't know what it looks like. Do you know what kind of bird makes this sound?
I enjoy the sounds of the grackle here. It makes a scratching sound, then a twill, followed by a tweet. Our grackles at home just make an irritating screetch.

Recipe
We haven't been able to find some of the products I usually use at home, namely gluten-free flour blends. My favorite is Bob's Red Mill Gluten Free One-to-One
Baking Flour.
I bought some corn flour and some oat flour. The corn flour is excellent and our host in Heredia taught me how to make corn tortillas. Did you know they are simply made of corn flour and water? I didn't. I'll share the recipe with you soon.
Oat Corn Pancakes
I used both oat and corn flours in a new pancake recipe. It is really good. As with most pancake recipes, it contains (gluten free) flour, baking powder, a little sugar, egg, milk (or alternative), oil, vanilla, and optional spices. I used cinnamon and nutmeg.
Gluten free pancakes take more time to cook than wheat flour pancakes. The batter is denser and needs to be cooked at a lower temperature for a longer time.
We didn't have a griddle so I cooked them in a frying pan with a little butter. After having tortillas every day for breakfast, they were a welcome change.
