Volcanoes Take A Rest
Thankfully, most volcanoes do not erupt every day. While “resting,” volcanoes build up energy that allows them to continue. You build energy when you rest, too—short breaks during the day and a good, long sleep at night.
Your Heart & Mind Depend On Rest
Do you know that not getting proper sleep can put stress on your heart and challenge your mind? Rest is important for your heart and your overall health. (Read the whole

Hola from Costa Rica!
We figured out what the bird is that sounds like a bubble!
It is the Montezuma Oropendola. What a beautiful bird!
Don and I have mostly taken it easy while here in the Lake Arenal area of Costa Rica, occasionally eating lunch in a restaurant. We went to a national park a couple days ago and did a strenuous hike (strenuous mostly because it was hot that day). I felt like sleeping for two days.
We spent a couple days planning our adventures and we're off to Tilaran for some lunch and shopping right after I finish this newsletter.
BRAND NEW Recipe
While staying with our "Mama Tica" Jannette, she taught me a few recipes, including "mi favorito," Costa Rican Picadillo de Chayote. Her name for it was much longer and included all the
ingredients.
I had never eaten chayote, a green vegetable shaped like a sweet pepper. It's very tasty! Besides that, the way she cut the beans was interesting. The recipe uses fresh green beans. In the United States, we generally cut green beans in pieces that are about 1-2 inches long. Mama Tica cut them across the bean, similar to the way we slice green onions.
If you can find chayote in your grocery store—and you may need to go to the Hispanic market—I highly recommend making this recipe. It is really good and low in calories and carbs.
Scroll down for the Picadillo
de Chayote picture that links to the recipe. I added a photo of the chayote in the recipe write-up, too.

Of course, you can still get the smaller size Food Journal on Amazon (affiliate link), too. I love both of them, but the smaller size is so easy to carry around.

Brand NEW Recipe: Picadillo de Chayote
Picadillo de Chayote is made with chayote, onion, red pepper, green beans, corn, garlic, cilantro, a little milk or alternative milk, some seasoning that's called "Yellow Coloring" or "Complete Seasoning," and a small amount of oil.
Most of the flavor comes from the vegetables and is it such a delicious combination. You will want to make this again and again! Click on photo for the
recipe.
