Hola from Costa Rica !

We had so much fun with our U.S. visitors, Margaret Fay and Ellen Fadel, for the past week. Lots of laughing, visiting, and birdwatching!

We took them to a few local restaurants and they enjoyed the Costa Rican foods. We also made Gallo Pinto, Patacones, and other delicious meals for them.

Recipe Reprise

Since March is National Nutrition Month, I'm giving your my Instant Pot Vegetarian Bourguignon recipe. It's one of my favorite vegetarian recipes, not only because it's amazing, but because it is low in calories and super nutritious. When I made it for my friend, she ate three bowls of it!
