Hola from Costa Rica !
I will be celebrating my 70th birthday in a couple of days, on February 3, which happens to be National Carrot Cake Day. How fun is that? Have you tried my Carrot Cake recipe?
Qué Pasa?
We are enjoying our laid-back trip to Costa Rica. Don got some great pictures of a toucan on Sunday. It was in the trees near the house where we are staying. They are big birds!
We had guests from Heredia join us over the weekend. It was a delight to host David, Linoshka, and their three-week-old baby, Mary Carmen. They helped me with Spanish and showed me how to make some Costa Rican recipes.

David taught me how to make empanadas and corn tortillas. After I practice a few times, I will share the recipes with you.
I have a new Costa Rican recipe for you today. Gallo Pinto is simple and super good. The Costarricense (people of Costa Rica) often eat it three times a day. I like it a lot, but not three times a day. :-)
BRAND NEW Recipe
This new recipe is another one of "Mama Tica" Jannette's recipes. Gallo Pinto, which literally means "rooster two colors," like white and brown or white and black. It is made with rice and black or brown
beans.
The only spices/flavorings in the recipe are caramelized onions, garlic, and cilantro. In the United States, I generally use canned beans, but here in Costa Rica, they are not readily available.
Being in a rental property, the pots, pans and kitchen tools are poor quality. Cooking beans with a slow cooker that has only hot (boil over!) or barely warm is a challenge. But the final result was delicious. It will be so much easier to make this dish when I am home in my own kitchen and able to use canned beans.
