Be Healthier Today Than Yesterday
Can you be healthier today than yesterday? Of course! Life is full of ups and downs. The last couple of years has proved that. But you can take control of your life and create the healthy lifestyle you desire.
I celebrated my 70th birthday last week. Yay me! There was a time when I never thought I'd live to be this "old." But today, I feel younger and healthier than I did 15 years ago. That's because when I was 55, I had a heart attack. It was the most painful experience of my life, way more painful than childbirth.
I decided I was never going to do that again, and set out to heal myself. Let me tell you how.

Hola from Costa Rica !
We are enjoying the daily walks/hikes in Costa Rica. Sometimes we walk for about an hour in our community. Sometimes we go to one of the national parks for a hike. Our hikes have been 3.5-4 hours each time! I'm amazed I can do such a long hike!
The beautiful flowers are starting to bloom, and we have seen lots of birds, a few white-faced monkeys and a snake eating a lizard.
We have been in the mountainous region of Arenal for the past few weeks. Next week we are off to the beach!
BRAND NEW Recipe
I posted another new recipe that we learned from "Mama Tica" Jeanette while in Heredia. Have you eaten patacones (fried plantains) in a Latin restaurant? If you live in Harrisonburg, you can get them at Cuban Burger. They are served without toppings, sort of like French fries. Jeanette taught us to eat them like tostadas.
Patacones Mini Tostadas are really good and gluten free. We topped them with refried beans, guacamole and homemade salsa. Patacones are made of platanos verde (green plantains) and can be eaten as appetizers or a main dish.

recipe.
Grateful for You
I truly value you, dear reader, because you stick by me and keep reading and responding to my messages. Thank you!
Until next week...
Be happy,
Lois

Of course, you can still get the smaller size Food Journal on Amazon (affiliate link), too. I love both of them, but the smaller size is so easy to carry around.

Patacones Mini Tostadas. Patacones are amazing, gluten-free tostadas made from green plantains. Just like other tostadas, you pile on whatever toppings you like: refried beans,
salsa, guacamole, cheese. I love being able to eat tostadas! Click on photo for the recipe.
