What to do with those ham leftovers

How was your Easter? We had a nice time visiting with family. I also got to meet my great nephew for the first time. It's been a while since I've held a newborn. You forget how tiny they are those first few precious weeks.

As promised today is all about making the most of those leftovers. I shared with you last week that I buy an extra ham when we're away for Easter Sunday and that's exactly what I did this year. I picked it up and am cooking it today. It will serve us well for a few days and the rest will go into the freezer for soups and beans in the coming weeks. Don't forget to save the bone to make a bit batch of ham and bean soup. If you own the Frugal Instant Pot Cookbook, there's a great recipe for ham and bean soup you should try.

Let's start with breakfast options. Ham is great first thing in the morning. Fry up a few slices and cook up some eggs and you're good to go. Or make up the Ham and Leek Pie recipe I shared with you last week. Here it is again in case you missed it.

Of course that's not your only option. Another favorite around here is Ham Breakfast Hash. You can make it with ham or turkey. Ham is my favorite.

Let's get into a few more actual recipes. This crockpot ham and potato casserole is always a big hit at my house after Easter. It's an easy way to use up the ham and after all the cooking over the weekend, it's nice to be able to toss everything in the slow cooker and come back to a complete meal.

If the weather is cool, like it is this year, a nice pot of ham and potato soup from the slow cooker never goes amiss either. I wouldn't serve these two meals back to back, but it's nice to have options. And remember, you can slice or dice the ham and toss it into the freezer to make either of these dishes later on.
