To be honest there were hundreds each time and I got a little burnt out. I did read each and everyone and I can't tell you how much your support and enthusiasm means to me.
This weekend is Easter and while it's a little late for me to share any Easter recipes with you, I thought this was a great time to talk about using leftover ham. Yes, meat prices (and groceries in general) are going up and up, but you can still get a good deal on ham around the holidays. I always by more than I know we'll eat and use it for leftover meals for days and weeks to come.
Ham freezes well. Chop some of the leftovers up and freeze them in portion sizes large enough to use in a recipe like the one below. It's always a favorite around here.
