Aloha. I hope every thing is going well with you. I'm doing fine. Yes I love making pizza, but I also love to make pasta dishes.
I wanted to share an easy
step by step Carbonara video with you from my friend, Chef Billy Manzo. Billy owns Federal Hill Pizza, located in Warren Rhode Island. A while back I went to visit Billy and he made some incredible pizzas for us. In addition, he made Carbonara.
He explains everything in this recipe and shows you an easy way to
make this incredible dish.
In the video he uses guanciale as the meat. You certainly could substitute pancetta or just omit the meat and make it meatless. I am sure it will turn out great.
The ingredients are:
Sea Salt, Red
Pepper, Egg Yolks, Basil, Penne Pasta, and guanciale, which is the jowl of a pig.
Also as you watch the video, Billy shares some of his insights on making pizza and Italian food in general. Billy is a master chef but also teaches and runs a non profit called Chefs Feeding Kids.
I love spending time with this guy. I always learn something and I love his positive attitude.
