Aloha and Happy New Year! I hope everything is going well for you. My New Year has been great. Everything has been slow and quiet... just the way I like it.
I'm getting ready to make Pizza for some friends and relatives this evening. I've done all the preparation which for me is the hardest and most important part of pizza making. I made the dough 2 days ago and did a bulk ferment in the fridge. I really find proofing your dough a day or 2 before, really improves the dough flavor. (Thank you, Peter Reinhart, for that tip many years ago!)
I am using King Arthur Bread flour which is one of my favorites. I tinker with different dough recipes by changing the ingredients slightly. Basically everything comes out the same, so in spite of my experimentation: everything works out well.
I think preparation is the key. I will have all of
my ingredients laid out for me, before I form my first pizza. There is nothing more frustrating than having to cut, slice and / or dice your toppings when you are not ready to go. I remember talking to a professional chef years ago and he told me a golden rule which I have seared into my brain;
"Mise en place (French pronunciation: [mi zɑ̃ ˈplas]), Albert!" which means "Put in place" or prepare all of your ingredients and get everything ready before you start to cook! This has served me
well whenever I make pizza or anything else for that matter.
And of course, whenever you make pizza, things don't always go the way you planned. I sometimes make mistakes and have issues. I have had so many problems, I created a Postulate, which I want to share with you.
