Aloha! I just got back from Pizza Expo and I am a bit tired. I was able to spend time with many of my pizza friends. The best part for me was able to watch pizza being made by some of the best pizza makers on the planet.
Unfortunately there were a number of people who I did not get to see. That's how it goes when you are at an event with over 10,000 pizza professionals. I was also asked to judge the World Pizza Games Pizza Tossing Finals.
We had to judge Dexterity, Difficulty, Variety and Creativity. No easy task, but I think it went well.

I often get asked about the pizza dough that is used during the competition. I was able to watch as the dough was balled for the games. The recipe is simple: water, flour, and salt. No yeast is used. They need to ball 300 pizza doughs for the
pizza games.
