Recipes for Thanksgiving Leftovers

Hi Cooking Moms, Dads & Friends,

I hope you had a wonderful Thanksgiving! We sure did. It was such a special day. I’m feeling so blessed!

There’s only one problem. We've got a seriously crowded fridge. I say leftovers are a good problem. I'm all over it! Let’s start with the turkey. It was so delicious this year, but I bought way too big of a bird. Oh well, this weekend I’m making my Southwest Turkey Soup. After all that eating it’s nice to have something healthy but delicious! It's perfect after a long day of shopping! I love it with my Big Batch of Cornbread and homemade Honey Butter!

We LOVE Mexican food! Why not use that leftover turkey to make my Turkey Enchiladas? They're my favorite!

If you've still got turkey after that I say make a big casserole or as my dear friends in Minnesota say - a hot dish! Either way they are great! My Turkey and Stuffing Casserole and my Taste of Thanksgiving Casserole both freeze beautifully! Then, a few weeks from now when you're craving all your Thanksgiving favorites, no problem. Just take one out of the freezer to thaw and throw it in the oven to bake!

And, don't even think about throwing out those leftover mashed potatoes! Use them to make my Loaded Potato Casserole. It’s goes great with my Nana’s Meatloaf!

The kids love my Mashed Potato Soup. It's so easy to make! I like to load mine up with cheese, bacon and lots of green onions. Now, we're talking!

Got extra cranberry sauce? We also have lots left over! Use it to make my Cranberry Chicken Bake. It’s a WINNER!

You can also make some fun holiday appetizers and game day munchies with the leftover cranberry sauce. We’ve got a big Packers game Sunday! My Cranberry Meatballs are a game day must. Just throw them in your slow cooker and watch them disappear. Great as an appetizer or get the bigger size frozen meatballs and make them for dinner! They are delicious over mashed potatoes.
