Happy Friday! I hope you had a great week! If you watched me on TV this week,  thank you! 

Some of you saw me cooking on TV for the first time! 

Some of  heard I host amazing culinary group vacations!  

I appreciate all of you! 

This is my weekly newsletter filled with recipes and news about my group vacations and secrets and kitchen tips too! 

I'm a just a mom who loves to cook! You may not know I'm a former news anchor.  I anchored the news for almost 20 years in several different cities including Omaha and Green Bay.   I now host a TV cooking show and I'm a food and recipe blogger.  

These days besides creating easy breezy recipes, I also plan very special group vacations!  Now that my kids are grown I'm on a mission to see and eat my way around the word! Join me! My trips are so special and so different from the rest! I get the best groups of people and we have an absolute blast and keep in touch long after our trips are over! 

I know many of you are interested in going with me to Italy!  This trip is over the top special! My annual Trip to Italy in September   sold out this week but I have GREAT NEWS! I'm working very hard on adding 2nd trip to Italy this year! Please Contact Me and shoot me an email to get on the waitlist if you are interested in joining me on a trip to Italy this year!  I'll have news on this VERY soon! 

I'll also be going back to Italy in 2025 too! Stay tuned for more on that trip! 

I have a bunch of really fun trips planned for this year and I'm working on lots more trips for next year too! 

Today I'm in the Minneapolis area.  We've had some spring like weather in most of the Midwest this week! I'm loving it!  I'm so over winter! Bring on spring! Today I was on TV cooking up some favorite recipes that get me excited and for spring.  I made the easiest best ever Alfredo Sauce  and my all time favorite spring salad on The Jason Show Today! I love cooking with Jason! He's a total hoot! Love him to pieces! 

This Strawberry Spinach Salad just makes he happy! 

It's so pretty and a taste of spring for sure! I bought some lovely strawberries this week. They were cheap too! T

This salad has a nice light homemade poppy seed vinaigrette dressing! It's super easy and so good! I just shake it up in a jar.  

This is my go to if I need to bring a salad for parties or potlucks! 

I bring the dressing in my jar and just toss it all together when I get there.  Everybody LOVES it! 

The buttery pecans make it extra special! 

Craving a big beautiful salad for dinner? Top this with grilled chicken, steak or even shrimp! Click Salads for more of my favorites. 

Speaking of shrimp.  I love a good casserole!  My friends in Minnesota call them a "hot dish."  Call them what you want, but for me there's nothing better than a really good one!  

Today I was also on Twin Cities Live to makr my Shrimp Fettuccine Casserole .   It's so good, it's company worthy. It's also perfect for a nice date night in! If I'm staying in on weekend night I always like to make a special dinner.  It's my way to celebrate the weekend!  

This casserole is also a great way to serve shrimp on a budget. 

Got guests coming? You can put almost all of it together up to 2 days ahead and keep it covered in your fridge.  

Then sprinkle the Parmesan cheese and breadcrumb mixture on top and bake it when you're ready. LOVE THAT! Click Casseroles and Dinner for more dinner winners! 

Sometimes a cheesy warm toasty sandwich really hits the spot.  

I LOVE a goods tuna melt! 

When is the last time you had one? Why not make my Baked Tuna Sandwich this weekend!  It's so yummy! You gotta try it! It's one of my favorites!  Perfect for Lent. Click Sandwiches for more great sammie recipes! 

Why not bake a big batch of soup this weekend! My Slow Cooker Shrimp Bisque is AMAZING! Crazy easy too! It's loaded with shrimp, potatoes and corn.  Just throw it all in your crockpot and a few hours later soup's on! We love this with crusty French bread so you can sop up every last bit of it! For dessert when I'm craving spring, I throw on an apron and bake my famous Lemon Poppy Seed Cake.  It's one of my MOST POPULAR recipes! It's so easy and crazy delish! 

Have the kids help make it! What fun!
